Commercial Service

Commercial kitchen and back-of-house deep cleaning

The grease and build-up a nightly clean cannot reach. Scheduled deep cleans that keep your kitchen ahead of the next health inspection instead of scrambling after it.

What Is Included

What the scope actually covers

No vague line items. This is what gets done, and what we will put in writing.

Floor degreasing

The single biggest slip and pest risk in any kitchen. Quarry tile and grout scrubbed with degreaser and agitated, not just mopped, including under and behind the line where grease migrates.

Equipment surrounds

Sides, backs and undersides of ranges, fryers, grills, prep tables and refrigeration. The surfaces that never get touched during service and that inspectors look at first.

Hood-adjacent surfaces

Filters, exterior hood surfaces, stainless above and around the cook line degreased. Note: we clean around and below the hood; full duct and exhaust cleaning is a certified trade and we will tell you when you need one.

Walk-ins and cold storage

Shelving removed and washed, floors and walls scrubbed, door gaskets cleaned and checked, condensate drains cleared.

Stainless and prep surfaces

Tables, shelving, splashbacks and sinks degreased and polished so they pass a wipe test, not just a look test.

Drains and dish area

Floor drains cleared and treated, dish pit and sinks descaled, surrounding wall tile degreased.

Bar back-of-house

Speed rails, wells, under-bar matting, drain lines and the floor beneath them, which is where most bars fail an inspection.

How Often

Getting the frequency right

High-volume kitchens generally want this monthly. Moderate-volume sites do well on a quarterly cycle with nightly janitorial carrying the load between. Many clients schedule the deep clean to land a couple of weeks before their inspection window so anything flagged can be fixed in time.

Pricing

What drives the price

Anyone quoting before seeing the space is guessing. These are the things that actually move the number.

  • Kitchen size and how many cook lines
  • Volume: a kitchen doing 400 covers a night builds grease far faster than one doing 80
  • How long since the last proper deep clean, as first cleans take significantly longer
  • Whether walk-ins and cold storage are in scope
  • Access window, since this is work that cannot happen during service

FAQ

Questions we get asked

Straight answers, including when the answer is that you do not need this.

Will this help us pass a health inspection?
It addresses the things inspectors most often write up: grease on and behind equipment, dirty floor drains, build-up on walk-in gaskets and shelving, and tile grout. It is not a guarantee, because inspections also cover food handling, temperatures and documentation, which are yours to run. What it does is remove the cleaning-related findings from the list.
How long does it take and do we have to close?
No. A typical deep clean runs four to eight hours and we do it overnight between service and open, so you lose nothing. First cleans on a kitchen that has been neglected can run longer, and we will tell you that up front rather than discovering it at 3am.
Do you clean the hood and ductwork?
We clean filters and the surfaces in and around the hood. Full exhaust duct cleaning to NFPA 96 is a separate certified trade, and your insurer and fire marshal will want the certificate from it. We will tell you when yours is due rather than quietly cleaning around the problem.
